The Japanese word for dried salmon is 鳥とば, and the kanji for とば is “冬葉”.
Why is it called "Winter Leaf"? That's because of how smoked salmon is made.
The process of making smoked dried salmon involves slicing autumn salmon, repeatedly washing the fish meat and skin together with seawater, and then naturally air-drying it with sea breezes.
Because they resemble the withered leaves left on a bare tree after a snowfall, they are called "winter leaves (とば)".
